Apple pumpkin crisp

Apple and pumpkin are the flavors of fall, and we love them even more when they’re combined. This tasty dessert pairs a superfood (pumpkin!) with loads of fruit (apples!) and tops it all off with a nutrient-packed nut (pecans!). Whether you make this for dessert at home or bring it to share at a holiday potluck, we’re sure you’re going to love it.

Ingredients Filling

  • 6 large apples, peeled and thinly sliced
  • ½ cup pumpkin puree
  • 3 tbsp. maple syrup
  • 2 tbsp. brown sugar
  • 1 tsp. vanilla extract
  • 1 tbsp. lemon juice
  • ½ tsp. pumpkin pie spice
  • ½ tsp. cinnamon

Topping

  • ½ cup rolled oats
  • 1/3 cup white whole wheat flour
  • ¼ cup brown sugar
  • ½ cup pecans, chopped
  • ½ tsp. pumpkin pie spice
  • ½ tsp. cinnamon
  • ¼ tsp. salt
  • ¼ cup cold butter, diced

Preheat the oven to 350 degrees. Coat a 9×13 pan with cooking spray.

For the filling, combine the apples, pumpkin puree, maple syrup, brown sugar, vanilla extract, lemon juice and spices in a large bowl. Mix well and transfer to the baking dish.

For the topping, add flour, oats, brown sugar, pecans, pumpkin pie spice, cinnamon and salt to a small bowl. Combine thoroughly with a wire whisk. Add butter pieces and mix with your hands until crumbly and fully combined. Spread over the apples in an even layer.

Bake 35-40 minutes, until the apples are bubbling and easily pierced with a fork and the crumble topping is golden brown.
