Cowboy Caviar
This easy side dish comes together faster than ice cream melts on a hot summer day. You can play with the seasonings to tailor it to your own taste.
- 1 15-ounce can black beans
- 1 15-ounce can white northern beans
- 1 15-ounce can corn
- 1 bell pepper
- 1 small red onion
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/4 cup apple cider vinegar
- 1/8 cup olive oil
- Handful of cilantro, chopped
- Salt and pepper to taste
- Drain the beans and the corn, and combine them in a large bowl.
- Dice the bell pepper and thinly slice the onion, then add both to the beans and corn.
- Add the rest of the ingredients and stir well to combine.
For the best results, make at least three hours ahead and occasionally stir to ensure the flavors combine. Store in the refrigerator.
