No Bake Energy Bites

The joke is that families with kids involved in extracurricular activities have the choice of eating dinner at 4 p.m. or 8:30 p.m. When you don’t have time for an early dinner, a handful of these no-bake energy balls will keep everyone fueled up until you finally reach the dinner table.

  • 1 cup old-fashioned oats
  • 2/3 cup unsweetened shredded coconut, toasted
  • 1/2 cup creamy peanut butter
  • 1/2 cup ground flaxseed
  • 1/2 cup semisweet chocolate chips
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • Pinch of pumpkin pie spice (optional)

Toast the shredded coconut in a sauté pan over low heat, set aside to cool as you gather the rest of your ingredients.

Stir all ingredients together in a large mixing bowl until thoroughly combined.

Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled.  (This will help the mixture stick together.)

Roll the mixture into 1-inch balls, and serve.

The balls can be refrigerated in a sealed container for up to 1 week, or frozen for up to 3 months.
