Provencale chicken

This simple yet flavorful recipe is a nod to French-country cuisine. It’s packed with protein and comes together incredibly quickly — perfect for a weeknight dinner.

  • Ingredients
  • 4 (6-ounce) bone-in chicken breast halves, skinned
  • 2 teaspoons dried basil
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 cup diced yellow bell pepper
  • 1 15.5-ounce can of cannellini beans (or other white beans), rinsed and drained
  • 1 14.5-ounce can of diced tomatoes with basil, garlic and oregano, undrained

Place the chicken in the slow cooker, and sprinkle it with basil, salt, and pepper. Add the diced bell pepper, beans and tomatoes.

Cover and cook on low for 8 hours.
