Pumpkin spice chia seed pudding

It’s pumpkin spice season, and this luscious pudding is sure to be a new cold-weather favorite. A dessert that’s nutrient-rich and packed with vitamins, fiber and antioxidants? Yes, please.

  • 2 cups unsweetened almond milk or full-fat canned coconut milk
  • 1¼ cups pumpkin puree
  • ½ cup pure maple syrup to taste
  • ½ teaspoon pure vanilla extract
  • 3 teaspoons pumpkin pie spice
  • ½ cup chia seeds

Put everything but the chia seeds into a mixing bowl and whisk together until well-combined. Add the chia seeds and mix well with a spatula or spoon.

Refrigerate overnight. Serve cold or warm. Top it off with toasted walnuts and pepitas or your favorite granola for a little crunch.

Per serving: 142 calories, 4.9 grams fat, 2.9 grams protein, 23.5 grams carbohydrates, 15 grams sugar, 6.9 grams fiber. Makes eight servings.
