Arugula salad with fig & goat cheese

If you’re tasked with bringing a salad to a holiday gathering, look no further than this delicious dish that whips up in just five minutes. The combination of sweet figs and tangy goat cheese will be sure to please. The beans add protein and fiber to balance out the decadence of the main meal.

  • 8 cups arugula
  • ¼ cup canned Great Northern beans, rinsed and drained
  • ¼ cup balsamic vinegar
  • 8 dried figs, chopped
  • 2 oz. crumbled goat cheese
  • ¼ cup chopped walnuts

Put the arugula in a large bowl. Drain and rinse the beans well and add them to the bowl. Add the balsamic vinegar and toss well.

Top the salad with chopped figs, crumbled goat cheese and walnuts, and give it a light toss.

Makes four servings.
