Low-calorie pumpkin spice cake

This low-calorie pumpkin spice cake is a warm, delicious and healthy treat. Add this dessert to your repertoire and serve it to family and friends during holiday gatherings. A slice tastes excellent with a cup of coffee or apple cider.

ingredients

  • ¾ cup pure pumpkin
  • 3 egg whites
  • 1 whole egg
  • 1½ cups self-rising flour
  • ¼ cup sugar substitute (or substitute granulated sugar)
  • 1 tsp. pumpkin pie spice

Whisk together wet ingredients in a bowl, and whisk together dry ingredients in a separate bowl.

Pour the wet ingredients into the dry ingredients and combine well.

Coat an 8-inch cake pan (or make it fancy by using a bundt pan) with baking spray and add the batter. Bake at 375 degrees for 20 minutes. Let the cake cool in the pan for 5 minutes and then transfer to a wire rack to finish cooling.

Makes 8 servings.
